Salt Cod fritters with a Sweet Red Pepper Sauce
From our friends at Trigony House Hotel, this is a popular re-working of a famous Catalan dish where sweet red peppers are stuffed with “brandade” a salt-cod and olive oil puree which usually has milk or in this case potato added to it. By salting the cod oneself with the garlic salt you get a slightly subtler (but still flavourful) fish than the completely dried salted Cod that you get in the shops. The sweet red pepper sauce is an adaptation of a wonderful recipe from the Gascony area of south western France and is a really great compliment to the saltiness of the fritters.
