<title>Toots on "Thai Red Chicken Curry"</title>

&#60;p&#62;Source - Jo Malone Catalogue.&#60;/p&#62;
&#60;p&#62;Serves 2 Generous Portions:&#60;/p&#62;
&#60;p&#62;Ingredients:&#60;br /&#62;
200g - Sliced Chicken Breasts&#60;br /&#62;
1 Packet per Person - Fresh or Dry Egg Noodles&#60;br /&#62;
1 Heaped Teaspoon of concentrated garlic&#60;br /&#62;
1 Tablespoon - Red Curry Paste&#60;br /&#62;
1 Teaspoon - Cumin&#60;br /&#62;
1/2 Teaspoon - Coriander&#60;br /&#62;
1 Average Size Cup - Coconut Milk&#60;br /&#62;
1 Average Size Cup - Chicken Stock&#60;br /&#62;
1 Tablespoon - Fish Sauce&#60;br /&#62;
Vegetable Oil - A couple of generous glugs&#60;br /&#62;
Spring Onion&#60;br /&#62;
Salt &#38;#38; Black Pepper (to taste)&#60;/p&#62;
&#60;p&#62;1. Cook the Noodles as per the instructions on the packet.&#60;br /&#62;
2. Place one half of the noodles in a soup bowl.&#60;br /&#62;
3. Heat Vegetable Oil in a Wok, deep fry half of the Noodles,&#60;br /&#62;
3. Place all ingredients in heated wok, except chicken &#38;#38; Noodles &#38;#38; simmer for 10 Minutes.&#60;br /&#62;
4. Add Chicken or Prawns &#38;#38; simmer until the Chicken or Prawns are cooked.&#60;br /&#62;
5. Pour the Curry from the Wok on top of one half of the Noodles.&#60;br /&#62;
7. Garnish with the Crispy Fried Noodles &#38;#38; Spring Onion.
