Serves 2&#60;/p&#62;
&#60;p&#62;Ingredients:&#60;br /&#62;
1 tbsp olive oil&#60;br /&#62;
1 smallish onion (chopped)&#60;br /&#62;
1 clove garlic (crushed)&#60;br /&#62;
100g button mushrooms (halved)&#60;br /&#62;
1 tin mixed beans, drained&#60;br /&#62;
1 tin chopped tomatoes&#60;br /&#62;
80g self raising flour&#60;br /&#62;
40g suet&#60;br /&#62;
4 tbsp water&#60;br /&#62;
1 tbsp mixed herbs&#60;br /&#62;
salt&#60;br /&#62;
pepper&#60;/p&#62;
&#60;p&#62;Method:&#60;br /&#62;
1) Heat the oil in a large saucepan and fry the onion and garlic over a medium/low heat for approx 5 minutes until onion is soft.&#60;br /&#62;
2) Add the mushrooms and fry for a further 2 minutes.&#60;br /&#62;
3) Add the mixed beans and stir.&#60;br /&#62;
4) Add the chopped tomatoes, stir and bring to the boil&#60;br /&#62;
5) Meanwhile make the dumplings: mix sifted flour and suet in a bowl, add herbs and salt and pepper and then add the water a tablespoon at a time until it forms a soft but not too sticky dough. Seperate into 6 round dumplings and add to the boiling saucepan.&#60;br /&#62;
6) Place a lid on the saucepan, turn the heat right down and simmer for 20/25 minutes until the dumplings are cooked through.&#60;br /&#62;
7) Serve in a warm bowl - scrummy!
