Mixed Bean Casserole with Herb Dumplings
Serves 2
Ingredients:
1 tbsp olive oil
1 smallish onion (chopped)
1 clove garlic (crushed)
100g button mushrooms (halved)
1 tin mixed beans, drained
1 tin chopped tomatoes
80g self raising flour
40g suet
4 tbsp water
1 tbsp mixed herbs
salt
pepper
Method:
1) Heat the oil in a large saucepan and fry the onion and garlic over a medium/low heat for approx 5 minutes until onion is soft.
2) Add the mushrooms and fry for a further 2 minutes.
3) Add the mixed beans and stir.
4) Add the chopped tomatoes, stir and bring to the boil
5) Meanwhile make the dumplings: mix sifted flour and suet in a bowl, add herbs and salt and pepper and then add the water a tablespoon at a time until it forms a soft but not too sticky dough. Seperate into 6 round dumplings and add to the boiling saucepan.
6) Place a lid on the saucepan, turn the heat right down and simmer for 20/25 minutes until the dumplings are cooked through.
7) Serve in a warm bowl - scrummy!
