spinach and mushroom lasagne

    just made this - we are not veggie, but often make this, friends love it too even thought not vegetarian.
    8 strips lasagne
    13/4llb spinach (or large spinach puree tin 795g)
    1 teasp butter
    350g ricotta cheese (or similar)
    salt and pepper
    SAUCE
    175g mushrooms
    1oz butter
    1/4 pint veg stock
    1 teasp soya sauce
    75g cheddar or parmesan cheese grated

    METHOD
    Cook lasage if necessary (I use ready cooked)
    Cook spinach if using fresh, otherwise warm it and add ricotta cheese and mix and season well.
    SAUCE
    saute mushrooms covered pan in butter.
    Reduce heat slightly cook for 10 mins.
    Add stock, simmerfor another 5 mins.
    Puree stock, add soy sauce and season.

    Layer spinach,then pasta, then mushroom sauce.
    Repeat and top with cheese.
    Cook 35/40 mins 200c /Gas 6/

    I like to make 3 or 4 individual lasagne with this recipe.
