    Thai Red Chicken

    Source - Jo Malone Catalogue.

    Serves 2 Generous Portions:

    Ingredients:
    200g - Sliced Chicken Breasts
    1 Packet per Person - Fresh or Dry Egg Noodles
    1 Heaped Teaspoon of concentrated garlic
    1 Tablespoon - Red Curry Paste
    1 Teaspoon - Cumin
    1/2 Teaspoon - Coriander
    1 Average Size Cup - Coconut Milk
    1 Average Size Cup - Chicken Stock
    1 Tablespoon - Fish Sauce
    Vegetable Oil - A couple of generous glugs
    Spring Onion
    Salt & Black Pepper (to taste)

    1. Cook the Noodles as per the instructions on the packet.
    2. Place one half of the noodles in a soup bowl.
    3. Heat Vegetable Oil in a Wok, deep fry half of the Noodles,
    3. Place all ingredients in heated wok, except chicken & Noodles & simmer for 10 Minutes.
    4. Add Chicken or Prawns & simmer until the Chicken or Prawns are cooked.
    5. Pour the Curry from the Wok on top of one half of the Noodles.
    7. Garnish with the Crispy Fried Noodles & Spring Onion.
